Foodie Friday: handheld breakfast

As you may or may not know...I'm in love with bacon.  I'm not joking...I'm addicted.  So, naturally I gravitated to all the recipes containing bacon on pinterest.  This week I made a handheld breakfast and it was quite tasty.

Here is how I did it...

What you need:
Can of biscuits
Eggs (the recipe I used called for 3 for a whole muffin pan, I made 5 and used 1)
Milk
Salt and Pepper
Bacon pieces
Shredded Cheese
Greased cupcake/muffin pan

Chop up the bacon and fry that heavenly goodness up

Open your can of biscuits and flatten out each biscuit

Press your flattened out biscuit into a muffin cup


Sprinkle a bit of cheese in each biscuit muffin


Mix eggs, a dash of milk and some salt and pepper...just like you were going to make scrambled eggs



Pour the egg mixture in each biscuit muffin, only fill the cup about half way...I didn't do that and ended up with this...


Add some bacon to the top and you are ready to cook 'em up!


Bake your muffins for 20-25 minutes on the temperature stated on your can of biscuits.
